Hand picked grapes made in a traditional method champenoise style and matured on lees for a minimum of 24 months. A powerful style with the base wine undergoing only a primary fermentation. Layers of bready yeast autolysis and toasty age. The mature fruit flavours balance the soft acidity to produce a sparkling wine in the top tier of sparkling wines in Australia. Perfect accompaniment for natural pacific oysters.
